WARM TAPIOCA PUDDING FROM SCRATCH!
PERFECT FOR THIS COLD, WET WINTER SEASON!
I start with Bob’s Red Mill Small Pearl Tapioca.
Then the rest of the ingredients.
1/2 Cup Small Pearl Tapioca
2 1/2 Cups Milk
1/2 Cup Heavy Cream
1/4 TSP Salt
1/4 Cup Sugar (Rapadura or Light Brown)
2 Eggs, Separated
1/2 TSP Vanilla
Sprinkle of Cinnamon
Soak tapioca in 1 cup of milk for 1 hour in a heavy saucepan. Then add the rest of the milk, heavy cream (for richness), salt, sugar and lightly beaten egg yolks. Cook on medium heat just until boiling while stirring. Turn heat to low and continue stirring for about 15 minutes (don’t let the pudding boil at this point). Test to be sure the tapioca is the texture you like. Remove from the heat and add vanilla. Let cool for a few minutes. Serve warm or chilled. I sprinkled cinnamon on mine this time.
